Set the Scene

Don’t call Sao a sequel. Yes, Mawn, the first restaurant venture from husband-wife duo James Beard Award-winning Chef Phila and front-of-house maestro Rachel Lorn, is a massive success and one of the crown jewels of Philadelphia’s dining scene, but the duo’s second spot isn’t a follow-up. To continue the film analogy, the Southeast Asian crudo bar is certainly in the same cinematic universe as the no-rules Cambodian noodle shop, but it’s a story all its own. The snug, new Passyunk hotspot relies on the same bright, herbaceous flavors, but the dishes and preparation lean more toward seafood. Its culinary credentials are bolstered by its laid-back, South Philly vibe and excellent beverage program.

The Food

The raw bar slings crudo and fresh oysters with signature sauces. The corn and dashi hoe cake topped with honey butter, smoked trout salad, and caviar, if you want (and who doesn’t?)—has become an instant signature. Another standout dish is the spicy crab gravy noodles, rich and comforting, with just enough heat to perk up your palate. Be sure to listen intently to the ever-changing nightly specials. The only bad choice at Sao is not ordering enough, a rookie move that the team will gladly rectify.

The Drinks 

Bivalves without a bevy are just sad. Luckily, that’s not an issue at Sao. There’s a curated list of wine by the glass and bottle, plus creative cocktails like the Jabroni Negroni (barrel-aged Bluecoat Gin, Aperol, Carpano Antica, maraschino, Islay single malt) and Wing Phat Plaza (Stoli vanilla, coffee, chicory, coconut, and banana). Of course, you can get a beer. Booze-free options include Thai iced tea and Mexican Coke.

Final Thoughts

Eating at Sao reminds us that heritage isn’t a monolith. Phila Lorn, a winner of the 2025 James Beard Award for Emerging Chef, combines his Cambodian roots and South Philly upbringing into the most exciting dining destination in a city that’s chock-a-block with good food.
