Where Europe Meets the Caribbean: Inside Markette & The Argyle

Set the Scene

Set across two levels in upscale, intimate environs, Markette and The Argyle reveal themselves as two chapters of the same story.

Upstairs, Markette’s luminous interiors–polished wood, brushed metal, sparkling chandeliers, and Renaissance-inspired murals foster a sophisticated tableau for the team’s modern European vision.

After enjoying dinner and convivial drinks, guests are led downstairs to The Argyle, where moody lighting, plush patterned seating, and sultry design elements evoke an old-world cocktail bar reimagined for today.

Together, they balance a seamless progression from dinner to drinks with the vibrancy of global influence and a touch of whimsy.

The Food & Drink Assessment

At Markette, Chef India Doris–a London-born talent and alum of the two MICHELIN-starred SAGA–crafts a menu that bridges continents. Her dishes are grounded in European technique yet animated by Caribbean verve, mirroring her multicultural upbringing.

Duck Fat Frites crowned with Royal Sturgeon caviar, Salt Cod Fritters brightened with habanero aioli, and Peri-Peri Chicken with fennel and apple salad capture her flair for precision and boldness in equal measure. Each bite evokes nostalgia for experiences not entirely your own and a sense of wanderlust.

Descending to The Argle, the evening evolves into an experience of liquid artistry. Beverage Director Chris Figueroa curates a cocktail program that plays on classic bar favorites. His Villa Paloma marries classic grapefruit and soda with sotol (in place of tequila), jasmine, sherry, and salted foam. The PB & J Sazerac features sesame and peanut butter-infused whiskey with cognac and Concord grapes.
